Could you do some arithmetic to figure out the size of the contact
patch on the original tires, then calculate back to get the same patch
on the new tires?  Might be a starting place.

Or, you could just put something reasonable in, like the
aforementioned 28psi and see how it handles.  But I'm an engineer, I
don't go in for simple solutions.
