I would not heat oil on a stove, its not safe. If you use water it will
boil at 212 Fahrenheit as long as you aren't to far from sea level.

your oil, test it in boiling water or hot oil at above 200: (in the range

want it to be acurate), test against a themometer or probe style pyrometer

another guage, you might be real supprised the spread guages can have from
reality. I think guages are very important but you should use them as a
relative
temperature reading not as a precise instrument reading. On water temp
10-25: off is not unusual.....I would be interested so let us know what you
