Northwest meet Tour #2

Cascaders,  I would like some input or thoughts on the Hwy 2 route to Spokane.
Like the Wenatchee tour I am thinking of starting from Monroe (Buzz Inn). We
started at 9:00 last time and got to Wenatchee at noon.  I was thinking that
an 8:00 start from Monroe would allow us to get to Waterville? for a late
lunch  with a rest stop just before Leavenworth. Any thoughts?  Too early?
Earlier?  Too far before lunch.  who needs lunch anyway.  Etc.
