Usually you don't hear it, but if you did it have a "bad bearing" noise, kind of a grinding or medium-pitched rumbling noise.

Waterpumps usually just wear out the seal and start leaking water.  Sometimes the bearings will wear a little so that the shaft is a tiny bit loose, which makes the seal wear out that much faster.  Only occasionally do the bearings wear enough to get noisy without you replacing it because of leaks first.  If the bearings do get to this point, you run the risk of the front of the pump coming off and in the case of a longitudinal-mounted engine putting the front of the pump through your radiator.
