Only one side, the outer side where the air enters (that also has the
pleats).
What is "3# away"?? Hope it's not 3 inches. I hold it about 9-12" away, and
each pleat gets about a "1,000-2,000" count, the spray moves pretty quickly.
You want the least amount of oil it takes to get the pleat red.

I have a question about when you  re-oil the K & N filter. Do you spray the
pleats on both sides of the filter or is spraying one side (the side that
faces the air box) sufficient. Some time ago when I cleaned my filter I
sprayed both sides and encountered a problem of oil contaminating the MAF
sensor elements, this after following the instructions(hold can 3# away and
spray down each pleat). At the time I sprayed both sides.  Can anyone offer
any advice on re-oiling the filter. Thanks,
