I've just moved to Linux-Mandrake, and I'm exploring possibilities too.
I was using Mercury as a server on my Windows XP machine. In fact, I'm
trying CommuniGate, but I'm not spending the cheese they want! I'd
suggest running imap instead of pop3. My XP setup was sweet. I was
running Apache with PHP installed. That allowed me to run ilohamail - a
php-based webmail app. Try to get a fixed ip. Go get a domain for
yourself. godaddy.com is pretty cheap. You'll also need DNS services. I
like zoneedit.com. I configured a virtual server on a sub-domain that
pointed at the php scripts, so I could punch in mail.zbuffer.com and get
my mail from anywhere. IMAP keeps the mail on your server. That way, if
you read or change a message from the browser or the PC at work, that
change persists as you move from machine to machine. Of course, there
are downsides. IMAP has more overhead than pop3, but for you, probably
alone, on a modern machine, it's trivial. I also ran pop3 so I could get
at my mail quickly from my Palm - I couldn't find an imap client I
liked. Another downside is that my mail was down for two weeks thanks to
directvdsl!

ps You can easily set a different account for each mailing list - forget
about filters!
