42mm should be OK. If for some reason it's not, you can always use a spacer.
If you don't get enough offset for a wheel (too low an offset number), you
are kinda screwed.

Yes that's the one. 4.25" converts to 108mm. Our SHOs use a 5x108mm bolt
pattern. The other consideration is the offset. 42mm should be okay. I
believe if you wanted to go wider still you'd need to reduce the offset,
otherwise you would run the risk of rubbing the inners.
