TeriAnn,

I have used minwax polyurethane on all my car wood refinishing projects,
steering wheels, dashes, gear shift knobs.  Just clean and light sand
before application.  I use satin finish, but whatever your preference is.
The water based dries really fast, will be ready to use the same day, but
is a little less durable than the old based, which may stay tacky a bit
longer (though putting it out in the heat or sun would accelerate the
drying process.
