The 1725 piston have an even larger dish, which lowers compression ratio a tad when used on the 1592 engine. With a milled head this can be overcome. Since NOS 1592 pistons are NLA, you dont get much of a choice anyhow.

I wouldnt use 2 head gaskets. At best it leaves twice as much potential for failure. (2 times the normal sealing surface area).

Better would be to use flat tops in the 1600, then open the combustion chambers up to arrive at the desired compression ratio. If properly performed, the head will flow better, AND you get to keep all or more than the STD compression ratio.
