I can definitely attest to this.  I had planned on building two motors
but after spending nearly $2500 on the first I have since axed that
idea.  
Keep it simple.  My 67 SV was my first restoration and I am wishing I
had heeded that advice.  Here I am, ten years after starting, and my
car is still not done (but very close) and I shudder to think what I've
spent over the years (I have purposely not added the receipts yet).  If
you're building a driver, then just do that (this was my mistake).  If
you're building a show car, then you've got a huge project on your
hands that will take thousands of $'s and many years (if you're doing
it yourself).  Most of all, don't lose heart and don't stop, even if it
means just doing one small task.  There were times I let my car sit for
many months without doing a thing.  If you get discouraged, then clean
the garage or rearrange your spares, do something to make you feel as
if you're accomplishing something.
