rear axle bearing / pinon bearing work in progress

I am in the middle of r&r'ing the rear axle bearings on my SV.
Query: My shop manual only shows a gasket under the dust cover; but the
bearing kit came with two paper gaskets. Is one to be placed btw the
backing plate and the axle flange?

Query2: Do the inner and outer bearing shields need to be R&R'd in the
process. So far I have left them undisturbed in the process.

Query3: What is the correct procedure for tightening the pinion nut? I
counted 15 turns backing it off the shaft. The nut was not particularly
tight. Is the procedure similar to tightening a wheel bearing? If so why
is there no castle nut/cotter pin arrangement?
