I am pretty sure that the 2300 courier engine used the 5200 holley
carb (licenced 2bbl weber), so the intake should be acceptable to
put on a suitible 2bbl weber, there are many flavors, and I may be
able to assist you there.
The best choice for intake of the 2300 would be side draft webers.
Not sure if you'd be able to clear the fenders with that setup though.
Edelbrock also made a 4bbl intake for the 2300, but you'd need some
serious engine mods before that kind of capacity would be warranted.

There are also a great deal of headers available for the 2300 engine.

Not sure if any or all of them would give you clearance problems,
but none the less, they are fairly cheap, and available from many
small ford parts venders.

I have a "never installed" header with smog fittings for a 75 pinto,
which used the same engine. It is missing the collector, but these are
easily made from off the shelf flanges.
