can someone tell me if a 1956/57 354 Hemi will fit in any of the vintage
class engine groups(XXO/XX PRO?)

The X engine classes(XF, XXF, XO & XXO) are specifically for flatheads and
inline engines produced prior to 1959.
The hemi would have to run heads up in the proper displacement class.
