I don't have all of the answers but having spent almost 50 years in
aerospace I have seen many manual systems connected to one controller via
linkage or Morse cables.
I realize it takes some thought and good planning but it can be done.
One of my old front engine top fuel cars had a system when I pulled the
chute release it shut off the Mag and the fuel valve at the same time with
2" of travel.

Another car had a air operated cylinder that had a manual over ride. In this
case it was on the chute only and the primary control was on the steering
wheel as we weren't shutting off the fuel at that time( unless the engine
blew and did it for us) The car also had a foot and hand brake linked
together so if it got harry I didn't have to take my hands off the wheel.
There are ways.
