Torque curve vs. gear ratio

I hope everyone had a good 4th of July weekend. I sure did.

I've got to fill some holes in my quickchange gear sets selection before
speedweek. I have recent dyno results that show peak Torque at 5300rpm and
Peak HP at 6800rpm. I have a 4 speed manual trans with a 1300 rpm drop between
gears. It is a long course roadster that should be in the 190+ mph range. What
would you folks recommend for shift points and targeted rpm for the last
mile?
