If you have stock carbs, you have HIF's , which means you only need to 
worry about a new gasket, or just resealing the  existing one. I think 
this could be done relatively easily with the carbs on the car, however, 
be sure to have something underneath the carbs to catch fuel.  However, 
if you are having trouble with flooding or overflowing , then your floats 
may need adjusting, and if you can see movement in the throttle shafts, 
as Bill mentions (just wiggle them), and have subsequent vacuum leaks 
(trouble setting idle), then they have to be professionally done. 

My '72 HIF's had good throttle shafts, so I completed the rebuild myself, 
a relatively easy task, although you have to ba carefull with the needles 
and dashpots.  BTW, I'm no mechanic.
