Can't say for certain, but I suspect tahat it has to do with the 
relatively poor heat transfer of anti-freeze as compared to water.  
Early "bedding in" of the rings, etc. generates a lot of heat.  Water, 
being a more effective coolant, would help keep this temp under control.
