Careful with strength assumptions of stainless steel.  Not all stainless
is hard.  Pretty good with corrosion resistance, but plan to pay top dollar
for *quality* SS with reasonable hardness rating.  Cheesy SS exists, and
not only can they be soft, but the corrosion resistance isn't even up to
par.
