It seems to me that the ONLY "easy" thing to install would be a direct
replacement; i.e. a second OE-style pump. Anything else (a "universal" pump)
would require some kind of kludge involving one or all of the following:
pipe fittings, physical mounting, electrical connections. Not to mention a
flow regulator, in all likelihood. Not exactly the quick swap you'd like in
an "emergency".
Personally, I can't see bothering to carry a spare fuel pump. Why not a
spare cylinder head or differential while you're at it? If you have a reason
to think it's not reliable, replace it before you go on a trip.
