Steve,

Yes, leave the carrier bearing. a long heavy drive shaft will wear out
the rear trans bushing much faster.

I would shorten the front drive shaft. It does not need to slide in and
out as the rear end goes up and down.

You should not adjust the angle as the rear shaft will not be changed.
The change in the angle of the front shaft should be minimal, it
probably doesn't have much angle to start with.
