Andy,
The pitch should change with changing volume, but it
is sometimes hard to hear over the "roar" of
everything going on.  You want an equal volume of air
going into each carb.

Regarding the clearances, if there is a different
setting required with your cam, the manufacturer
should have provided it with a spec sheet with the cam
(mine is .018 for instance).  Check with the cam
supplier if possible.  I believe the higher
"competition" clearances are for the increased heat
from harder driving, as well as to account for
geometry of the cam acting on your valvetrain
(combination of lift, duration, timing, etc.).
