Bob -

1) Look at fuel delivery.  A weak fuel pump, kinked fuel line, or stuffed 
fuel filter will deliver fuel, but not fast.  It might just be able to keep 
up with gentle acceleration, but really jumping on the pedal can pull down 
the float bowls faster than the pump can refill, making the mixture go lean.

2) Look at the balance between the carbs.  If airflow or mixture is off 
between the two, but the "composite" is OK, the car will run OK at idle, and 
will continue to as long as the air flow through the balance pipe can keep 
all 4 cylinders breathing through both carbs, but when you jump on it, each 
pair of cylinders pretty much breathes through only 1 carb, which, if 
they're unbalanced, can lead to a stumble.

I've seen cars with this set of symptoms with each of these problems.
