Dave,

Head thickness is measured from the valve cover flange surface that
encircles the top of the head to the block mating surface.  A pair of
calipers works perfectly.   A machine shop will be able to check this for
you if you cannot.

Check out this compresion ratio tech article.  It also takes into account
cylinder overbore which affects compression.

Early heads are at 8.5:1, later heads (1972-1976) are at 7.75:1.
