As far as I know, you have to stay with exact stock dimensions
for a stock class car. The S2000 has tiny 16" diameter wheels:
6.5" wide front and 7.5" rear. At this point our best guess is to
put 225s on the front and 245s on the rear.

Yes, the different sizes are a pain.
Steve, my brother, has been running an MR2 turbo in AS
for the last umpteen years and has been dealing with
the different wheel/tire sizes all that time.
So it is nothing new with the S2000.

Speaking of wheels, doesn't the s2000 have larger rear wheels than front?
If you have a car like this, is it legal under stock specs to go with one
wheel size all the way around, or do you have to stick with the exact stock
configuration?  Seems like it would be a pain always having to buy 2 of each
size tire and being limited as far as tire rotation is concerned.  Can you
actually go with a narrower rear wheel to match the fronts and still be
stock legal?  Just curious.
