I replaced the harness in my 57 GMC with a harness for a 57 Chevy truck 4 years 
ago and experienced the same problems.  Got the harness from one of the 
oletruck parts houses.  If I had it to do again I'd put in an aftermarket 
harness instead, but I suspect that you are trying to keep yours "original".  

Unless your harness is GMC specific another problem you will run into is that 
the turn signal indicator in your GMC dash will not work with the Chevy harness 
that expects separate left and right indicators in the dash.  I solved this 
problem by installing a 1N4001 diode in each wire, connecting the stripe end of 
the diodes together forming a poor man's "OR" gate, and connecting this new 
point to the GMC indicator lamp.  It's worked with no problems for 4 years.

The new wiring harness I have for my truck does not seem like the easiest
thing to install, nor does it seem complete.

The harness is not all in one piece. There is a main harness, a front light
harness and a rear light harness. Both light harnesses do not have the light
ends attached and the instructions are very poor. The instructions make
reference to numbers but the wires do not have one numbers on them.

Has anyone had a more positive experience with a wiring harness and can
recommend a better brand/manufacturer?
