Yellowing of plastic windows is due to effects of UV (ultraviolet) exposure
from sunlight. Over time, the UV causes the plastic to deteriorate leading
to clouding, yellowing and becoming brittle. There is no prevention, only
prolonging. Some plastic materials are more resistant to UV than others. You
can apply some "protectant" that reduces the effects of UV or you can put an
opaque cover over the plastic to "hide it" from the UV.

Go to your local boating store. They sell many products that offer some
protection from UV. Be careful to find one that is suitable for clear
plastics, some will cloud clear plastic. For fabrics, one product I have
heard of is called something like "303". There also are several products by
Meguiars.
