I am going to change the rear end on my 57. I have a 307 in the truck now but will replace it with a ZZ4 in the future. My question is what is a good gear ratio to use for the replacement? I use the

I vote for either 3.55 or 3.73 gears. The lower first gear ratio of the 700R4 compared to Turbo 350 or 400 will really let you get going from a stop. now but will replace it with a ZZ4 in the future.
