I have done it with a 7' headroom in my garage before I added on to it. All of it. Use a floor jack and pull the engine straight out the front. Depends on what it's holding up. The roof? ceiling beam

I yanked the engine/tranny out of my '74 by myself using a cable "come along" in a garage with 7-6" ceiling. No big deal, but somewhat daunting and it took some twisting and pushing of the car back.
