I'd start with a compression or leakdown test. Check the spark plug wires for arcing, and for consistent spark using a timing light. You can also spray water on the header primaries to see if the #3

My first thought is that, yes, you may have dropped a valve seat. But if that's the case, it may not be all that serious/expensive. Pop the cam cover, pull the plugs (to make turning it over easier)

someone out my way dropped a valve seat on a U20 recently and then spent about 15 minutes trying to get it to rev up and smooth out. highly not recommended, the valve kept making contact with the pis
