I was able to replace them with the engine in place.  I put a jack
underneath the engine (used some wood to protect the oil pan) and
jacked the engine up ever so slightly to the point where the jack was
holding the weight of the engine rather than the mounts.  After that I
was able to unbolt and replace the mounts (doing one at a time).  If I
remember correctly, I may have let the engine settle down on the
mounts before fully tightening them down.

Yes (just make sure you have something below to catch the gas as it
comes out).  The plug isn't in there too tight.  If the o-ring on it
is shot, you might be able to pull it out with your fingers.
Otherwise, you should be able to gently pry it out with a stubby
flat-head screw driver.  Putting a small mirror under the carb might
help to see what you are doing.
