I have had actual failures of the block (several cracked between rear stud
and water cavity) (repairable by metal stitching, by the way) and head
gaskets of course, including one that would leak only at race speeds.

My car used to always run over 200 deg. Made me nervous. Here's what I tried:

different temp gauges - no help
water wetter - no help
various sizes of restrictors and thermostats - no help
blocked off bypass -- no help
electric fan -- some help on grid, in paddock, etc

Then I bought a $189.95 stock car style aluminum radiator. I mounted it to
the original mounts. It now cools so cool that I have to run a thermostat,
and the oil now is always below 180 deg so I'm going to remove the oil
cooler this year in the interest of weight reduction. Oh, yeah -- I put a
brass plug in the bypass circuit and drilled a 1/4" hole in it for
circulation at low temps, and I retained the electric fan for use on the
grid in July.
