Phil,
You don't say which way you need to gain an eighth of an inch. Does the door 
still need to come inboard 1/8 to latch properly, or what?
If so, the striker must still be sitting proud of it's original position. 
Don't be too tempted to hack away at the hole through the aluminum trim 
plate. You don't have much margin for error before the enlarged hole will be 
able to be seen. If you can't gain the distance by carefully enlarging the 
hole, the angle of the inner flange of the aluminum might not be 
perpendicular enough. Try carefully reforming that to a more acute angle. 
This of course will allow the striker mounting hole to move a bit inboard 
and might be enough to do the trick.
If all this is still not enough, you can cheat on this latch positioning by 
shimming the 4 screws mounting the latch assembly inside the door.
