Hi Adam,
  First step is to start soaking the Ujoint with Liquid Wrench. 
Punch-mark or scribe lines on the u-joint and the shafts to assist in
reassembly.
 Remove both bolts and nuts completely. Remove the three bolts that hold
up the steering wheel support  to the dashboard. Lower the steering wheel
onto a cardboard carton or a pile of phone books.
 Under the bonnet again, slide the Ujoint (that's almost a joke except
that we're not permitted to have any sense of humor in our correspondence
any more) beat the thing in the direction where you see the most exposed
splines.  When the u-joint is there, the other shaft is supposed to slide
out. It might.  Then tap the ujoint back until it comes off the shaft. 
  When you go to reassemble, it's necessary that the centerline extension
of each shaft meet in an imaginary point in the center of the ujoint. 
Cars with collapsible steering columns are supposed to require a pair of
cone-shaped pointers to do this.  I haven't had them, so have probably
wasted a lot of time getting this right, but if you don't get it right
the steering column binds and has a sort of snapping/thumping feeling.
That seems to not occur until the tyres are back on the pavement.
 None of this is complicated; it's just harder than it appears because of
rust on the ujoint splines.
