Dan,
  I considered the lowered springs all round for my '72 GT, because one
car in our CT MG Club has them installed and it does look cool.  But,
having talked to the owner, I decided to stick with the original height. 
Our secondary roads have numerous lumps and bumps, and in winter there
are chunks of ice as perils.
  The job itself is pretty straightforward, and is a dirty one-person
job. It would be easier with a helper, but it's not complicated.  Put
penetrating oil of your choice on the bolts every day for a week before
you start.  Kiss off the old U bolts before you start and buy new ones,
as the ones you don't break you will cut anyway.
  Get the car way up in the air on the highest jackstands you can borrow,
having first run the front wheels up onto a pile of 2x8s ( I have three
screwed together to make a 4.5 inch high wooden ramp)
  I unbolted the Ubolts, then undid the back bolts at the shackles, then
supported the axle with a floor jack, undid the fronts and lowered it.  
  Reassembly is more or less the reverse.
  When the rear was done I found that the fronts had sagged too, just not
as obviously.
