Basically, you "wreck" it.  :-)

Pour the concrete.  Do a minimum of floating, because floating makes the
aggregate sink.  Let set for about one hour.  Then take the garden hose and
wash off the top layer of cement.  Takes a little practice.  Sue did the
timing and the finishing, leaving me free to do the grunt work of carrying
and mixing concrete.  It took us all day to do the sidewalk.
