Spilt Milk

OK, here's a head scratcher.

My co-worker tells me he dropped a gallon jug of milk on his driveway last 
night. Upon returning with the hose to rinse it off he noticed it had 
stained the concrete white. Any chemists out there care to venture why this 
is?
