Ceiling height is 16'.

I like the idea of a central electric winch, that splits off 2 cables to the
far corners. Once the track is in the "down" position, you could have a
quick disconnect on the cables to the eyebolts in the track. The wall side
of the track can be on heavy gate hinges. The Harbor Freight winches have a
nice remote control... the only issue being how do you limit travel in the
"up" position? (That may be the argument for a hand crank winch)

Well, assuming it's not very high, I guess you could mount it to the walls
in a corner and suspend from the ceiling to form a sort of triangular track.
Or, if you want something movable, as you suggested, still stay in a corner,
put a pulley through the middle for a dumbwaiter effect, and have some
permanent supports on the wall to support in the lowered position, with a
fold out leg for the side that doesn't have a wall for support.
