Matt, enjoy your ground up resto.  I am doing the same thing, except I
stored my car, when I purchased it in 1973, and then started the restore
2  years ago.

I took the media blasting route, and there are pos and neg on both, but
it really depends on who is doing the work.  

A note of caution, look at the car as it comes out to make sure that
they did do an etch primer, and  2 part primer before accepting car.

BTW, how much will you pay for this process?
