The best thing to do is to get someone knowledgeable in your area (and there
are more than a few) to have a look at the car with you, and to check out
the workmanship in the automatic conversion. If it was done with some skill,
then restoring the car to a manual transmission setup shouldn't be a huge
issue. If it's necessary, a good replacement sheetmetal source is Rob Martel
(http://www.robmartel.com/), there may be some shops in the US that can get
his parts without you having to worry about import hassles.
Note that if the 289 is a six-bolt bellhousing block, then the original 260
four-speed will not bolt up - you'll need to find a matching bellhousing.
Not the end of the world, but something that you'll need to dig into.
