Well explained, Erich!

System is a closed loop...check. Straight water caries more BTUs than 
radiator fluid...check. Move the straight water in the closed loop rapidly to 
exchange heat and prevent boiling in the engine...check!

One will want to add some lubrication/anti corosion/surfactant to the water 
to keep the Cooling System Stuff happy.

High quality high flow water pumps (Edelbrock has an outstanding pump) 
consume an insignificant amount of hp vs a stock pump for it's gain in water 
flow 
over a stock pump.
