I am concerned that you learned the wrong answer to the question of
metal gaskets.
They are now used, by Ford, in main cylinder head gaskets, as well as
the application at the exhaust.
They are definitely superior in sealing and heat transfer to the old
copper/asbestos sandwich, and can contain
higher pressures at higher temperatures.
They have but one disagreeable attribute, they can only be compressed
and seal ONCE, then they are done.
Rethink your conclusions, and check what Ford and the racers are using.
They are expensive, and require flat mating surfaces.
In days gone by, we used solid copper head and exhaust gaskets - once.
