Andy,

If you have a carb. it sounds a like a fuel delivery problem to me.  Have
you checked your filters/fuel delivery system?  Any of them, carb
(internal/external), fuel tank screen, collapsed fuel pipe, could be
slightly blocked, causing the fuel level in the carb float bowl to drop
as you drive.  Pulling over allows the float bowl level to catch up.
