If you have your radiator out at the shop have them put a bung in for you.  
Failing that you can rig up a fitting for the manifold heat hose with a 3/8 NPT 
fitting that will work fine except you may have to run a ground wire for the 
sensor to work properly.  Sunbeam Tigers had such an arrangement for the temp 
gauge.
