[Roadsters] Interior parts

I am pulling out the interior on the '67 and replacing most everything except
the seat covers this winter.  I am interested in your experiences with
different vendors interior parts, especially quality and fit.  For instance,
is Stan's dash better than Les's?  Does one carpet kit work better than
another?   I do plan to POR15 and dynamat the whole floor, is there anything
else I should do while it is stripped out?
