It is hard to PREVENT people from bidding high on your item if that is what 
they want to do.
  I've sold a couple of items on ebay myself, and in one instance the guy 
insisted on sending me more money than I asked for.  I guess you could put a 
"buy it now" price in there so someone could just buy it for that price.  
That would limit the bidding.
