I had a fairly hopped up 240Z that did that;  together with the machine shop
we decided that it had localized heating in the head from the failed t-stat,
before the gauge ever had a chance to read, as I shut it down quickly. The
head had warped, although not too much.  The stock temp gauges are quite
damped and take too long to read a change in temp.

(thank GOD it was under warranty at the time), they removed the head, had it
pressure tested and checked the block for warps, found nothing wrong with
any metal, replaced the gasket and I was fine after. The car had a failed
t/stat 4 years ago but the temp never went up to dangerous levels because I
shut it down fast.
