[Shotimes] Cooling system woes

Hope somone can help me out with this one,
     SHO has been running cold now for well over 2-3 months and i have 
finally gotten around to changing the T-stat. I siphoned off about a gallon 
of coolant so it wouldn't be wasted when i pulled the water outlet (which is 
now bright yello :) ).The replacement i purchased from a certain vendor (not 
mentioning any names) fit right but did not have any jiggle valves on it. I 
know there is supposed to be at least 1 if not 2 jiggle valves on the piece 
but, i trust the vendor and figured it should work regaurdless. Well i 
filled the resivior back up, and turned her over. everything was great, she 
heated right up. And kept going, and going and going. Now my temp gauge is 
pegged under normal driving at the "N", which i know is far from normal. The 
upper radiator hose is filled with air, i have yet to see it fill with 
water. So, did i get jipped on the T-stat? Would a backflush properly get my 
system to cycle properly? and i'm guessing keeping miles of the SHO in this 
state is definetly a good idea? any help would be most helpful.
