[Shotimes] Capping off coolant bypass in the valley?

I've been looking for a while at the cooling system on a SHO, and wondering
how to integrate in an electric waterpump. I've known about the perfect pump
for a while now, but the one drawback I have always see was the coolant
bypass tube that runs down the valley between the heads. Now if someone were
to be building a strictly late spring, summer, early fall car, would there
be any reason why the bypass couldn't be removed? I know it is there to
recirculate coolant to get the engine to operating temps faster when the
thermostat is closed. But the waterpump that I'm planing to utilize has a
electrical controller to slow the pump motor down via voltage till a
temperature sender reads the desired temp for the engine. It doesn't stop
the flow completely mind you
 
It's something I have kicked around for 2 years now, and jsut recently I
found the pump and controller kit used from someone that is de-modding a car
and selling off the pieces. Before I bought the electric pump setup I wanted
to get some thoughts here about capping off the bypass. EWP's have been
shown to free up a bit of HP, and I like the idea of not having a WP to wear
out and leak onto my CPS.
 
For a 3 season car I almost can't see any real drawbacks.
