Stock offset is +42mm.  But any offset between 35-45mm should work without risk of rubbing if you stick with the same size tire and rim.

Yes, backspacing is the offset to the rim (i.e., the distance from the rim mounting surface to the outside of the inner rim.) In other "words"

BS = RW/2 + OS + LT

where BS is the Back Spacing, RW is the Rim Width, OS is the OffSet and LT is the Lip Thickness. 

Typically LT=1/4" IIRC.
