You'll need a sound card with digital *in* because the only way to get the
AC3/DTS data is through a digital signal.  Coax or optical will work.  This
part is fairly inexpensive as a SoundBlaster Audigy2 should work as long as
you get the optional digital in. For instance:

Then you need to decide what the video input to your capture card will be.
S-Video and composite are pretty inexpensive, but capture cards with
component video inputs are very expensive.

Then you use the software that came with the encoder to capture the video
and audio streams.  You could capture them seperately, but then you'd need
to resync the audio to the video, which is a pain.

I think you'll find that all of this is a pain, but then LaserDisc is the
only way to get some titles like the original unmolested Star Wars movies.
